Description
Duckweed (Eendekroos in Afrikaans) has crude protein of 32 percent when wet up to 48 percent when dehydrated, fiber of 5 to 15 percent, polyunsaturated fat of 5 percent, and a host of trace minerals, calcium and Vitamins A and B. It even produces Vit B12! Its protein content is said to be equal to that of dried soybean meal and healthier than egg white.
Duckweed is similar in taste to watercress or spinach. The wolffia genus has traditionally played a role in Asian cuisine, where it is used as a nutritious vegetable by the Thai, Burmese and Laotians.
How to use dehydrated duckweed:
- Add half a teaspoon of duckweed powder or a spoon full of dried leaves to your morning shake or smoothie.
- For a delicious breakfast, mix half a teaspoon of powder with yoghurt and eat with fruit salad.
- Duckweed can be mixed into soups and salads, or used in sandwiches as a substitute for alfalfa, lettuce, watercress or spinach.
